Due to the pandemic we don’t really get a chance to go out that much, the only thing we really go out for nowadays is grocery shopping. We miss some of the great food we used to go out for like Japchae. We love this food, its sweet salty, with veggies mushrooms and glass noodles or called sweet potato noodles. Every time we go to Korean restaurants this is one if the food that will always be on our table. So lets go ahead and start making this delicious recipe.
Ingredients:
For chicken marinade:
- 1 lb chicken thighs (boneless, you can also use the breast but i prefer thigh all the time because it has more fats and flavor i think)
- 1 1/2 tbsp sugar
- 1 1/2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp mirin (rice wine)
- 1 tbsp garlic minced
Veggies,eggs and stuff
- 2 carrots medium size
- 3 eggs
- spinach (depends on how much you want, my husband dont really like leafy so i just put a lil bit)
- 1/2 onion (if yoy like onions you can put the whole large onions, again its up to you)
- 1 oz of shitake mushrooms dried (probably easier if you get a fresh one any mushrooms works too, just bought a dried one because it was infront of me already lol 😂)
- 1 lb of potato noodles
For sauce
- 2/3 cup soy sauce
- 1/2 cup sugar
- 2 tbsp sesame oil
- 1 tbsp sesame seeds
- 1 tsp pepper
- Cut the chicken into thin small strips. In a medium bowl mix all the marinating ingredients such as sugar,soy sauce, sesame oil, mirin, garlic mince and add the chicken.
- Meanwhile prepare the other ingredients, slightly beat the 3 eggs, cut the carrots and onion into thin strips, and cut the mushrooms into strips too if you are using whole fresh shitake mushrooms.
3. In a big pot, put a good amount of water and turn on the heat. Wait until the water has a bubbles and add the noodles, let it boil for 8-10 minutes or until its cooked.
4. In a frying pan or skillet add a little vegetable oil and fry the eggs in low heat so it doesnt burn and it cook through. Cut it into stips.
5. In the same pan or skillet, add a little oil again if it needs to and sauté the carrots, until its half cooked and sprinkle some salt, set it aside .and in the same pan, sauté the onion until its half cooked, set it aside, in the same pan sauté the spinach sprinkle some salt. Set aside. In the same pan sauté the mushrooms I used dried shitake so i had to add water constantly because the mushrooms absorbed them while its cooking, sprinkle some salt, set aside.
6. In the same pan again, fry the marinated chicken until its cooked. (I just pour the chicken in the pan with all the marinade, the chicken is better when it absorbs all the sauce from the marinade.
7. Drain the noodles. And put it in the big enough bowl.
8. Prepare the sauce. In a medium sauce pan mix all the sauce ingredients, soy sauce, sugar, sesame oil, sesame seeds and pepper heat the sauce a lil so it melts the sugar u dont have to wait for it to boil.
9. Pour the sauce in the noodles, mix it all up. Add all the veggies and allthe stuff you sautéed.
10. Thats it, mix them all up, and enjoy the food. 😊
