Introducing my version of Mechado. This recipe is a hit for my family, this is one of our families favorite dishes. I love when the meat is very soft and with a little sweetness on the sauce. Mmmm delicious! In the Philippines we made this mostly for occasions. Hope you guys enjoy this recipe too. So let’s get started.
Ingredients:
For marinating the pork:
1/2 cup sou sauce
2 tbsp sugar
1/2 tsp pepper
2 lbs pork
For Mechado sauce:
3 potatoes
4 medium carrots
16 oz tomato sauce
Half bell pepper red
1/2 tbsp sugar
1 tsp salt
1 tbsp garlic (minced)
Half onion (chopped )
Total of 5 cups of water
Directions:
- Marinate the pork with 1/2 cup soy sauce, 2 tbsp sugar, 1 tsp pepper, set aside
2. Sauté the onion and garlic and add the marinaded pork. Keep stirring it until the pork absorb all the remaining sauce.
3.Pour 4 cups of water and cover it up and wait for it to boil
4.When it starts boiling lower the heat down to medium heat. And let it continue to boil. Check it once in a while until the pork gets soft.
5.Put the potatoes and carrots and pour the tomato sauce add 1 cup water.
6. Add the 1 tsp salt, 1/2 tbsp sugar, and pinch of pepper, stir it and cover it up, when the potatoes and carrots are almost done add the bell pepper. Then wait for them to be completely done and soft.
This is good especially when its paired with white rice.

The Mechado I made came out amazing as always using this recipe. The only thing I do differently is use a whole Red pepper as my family loves them. Thank you for this delicious recipe, me and my family look forward to more!
